Meat meter measures marbled muscles
[摘要] A hand-held device is developed to assess the deliciousness of meat. The quality of beef depends upon marbling of meat, that is particular flavor, succulence, and tenderness. If the marbling increases, meat does not get tastier. So, by using a fiber-optic probe the concentration of oleic acid in the meat can be determined without damaging meat.
