Growth performance and meat quality of Large White and local pigs reared in the tropics
[摘要] TheaimofthisstudywastocompareLargeWhite(LW)andlocalquot;Creolequot;pigs(CR),intensivelyrearedinatropicalenvironment,intermsofgrowthperformanceandmeatquality.Theexperimentinvolvedatotalof30LWand30CRpigswhichwereslaughteredat4,5and6monthsofage.CRanimalsexhibiteda34%lowerdailyweightgain(Plt;0.001)andafattercarcassthanLW.Theincreaseinbackfat+leaffatpercentagewassignificantinCRpigsatageof5monthswhereasinLWanimalsitwasnoticeableonlyat6monthsofage(interactiongenotypexageatslaughter:Plt;0.001).MusclepHvaluesdeterminedat45minutesand24hourspostmortemwerehigherintheindigenouspigthaninthepurebredLWanimal(Plt;0.01).DriplosswassignificantlylowerinCRpigsthanintheLWones(Plt;0.001).AtastepaneljudgedthemeatoflocalpigsofbettersensoryqualitythanthatofLWanimals.CRmeatwasfoundtobemoretasty(Plt;0.05),morejuicy(Plt;0.01)andmoretender(Plt;0.001).Localpigsareconsideredtobeoflittleimportanceforcommercialpigproductionduetotheirfatness.However,meatqualityofCRpigswassuperiortothatofLWanimals,astheformerexhibitedahigherultimatepHvalue,lowerdriplossandbettersensoryqualities.
