PEDIOCOCCUS SOYAE NOV. SP. MAIN LACTIC ACID BACTERIA IN "SHOYU MOROMI"

[摘要] The authors have isolated a tetrad forming cocci from "Shôyu Moromi" which is revealed to be the main lactic acid bacteria in the mash and is concluded to belong to one species of the genus Pediococcus. This species has been recognized to be a new species different from known species described in the literature from a comparison of the taxonomical properties investigated. Pediococcus soyae nov. sp. has been proposed as the specific name.
