Rapid Raman mapping for chocolate analysis
[摘要] Ramanmicrospectroscopymappingcapabilitieshaveadvancedsignificantlyandhavebeenappliedtocellandpharmaceuticaltabletformulationanalysis.BulkRamaninvestigationsoffoodandtheirconstituentshavebeencarriedoutbutlittleworkexistsontheapplicationofRamanmappingcapabilitiestofood.Here,weassesstheapplicabilityofRamanmicrospectroscopymappingtotheanalysisofchocolateandexaminebothwhiteandmilkchocolatesamples.Itwasfoundthatthesucrose,lactoseandfatconstituentsofwhitechocolatecouldbeextractedandspatiallyresolved,indicatingthatthesucroseandlactoseformedparticleswithinamatrixof‘fats’.Fluorescencefromcocoasolidspresentinmilkchocolatepreventedchemicalmappingwiththeinstrumentationused.Ramanmappingshouldprovideapowerfulanalyticaltechniquefortheanalysisanddevelopmentoffoodproducts...
